Some weeks ago I attempted to make Bisquik muffins, a scone-like confection with a jam center whose primary ingredient is —you guessed it. The recipe that my mother had saved from the side panel of a Bisquik box in the ’70s called for raspberry jam as the filling for the middle. When I was little and she first made them, I called ‘em “Suprise Muffins”. However, this time around, I did not have raspberry jam and wanted something more sophisticated & exotic anyway, so I substituted rose hip jelly (which I had) and which unfortunately did not hold up well to baking but got all watery. Keep in mind that in my family I am the only one who actually likes rosehip jelly when I tell you what happened next: my sister Michelle tried one of the muffins and got an unexpected suprise indeed. According to her, the rose hip jelly center “tasted like cleaning fluid”! I will concede that the flavor was a little harsh; maybe I should mix raspberry/strawberry and rose hip jam until it gets a more “natural” taste next time!
